Our factory is a true center of excellence, where every dessert is crafted with passion and precision. Thanks to our team of pastry experts, we create premium products made from carefully selected ingredients.
Proud of our French roots, Macaronade de Castel now shares its savoir-faire with the world, exporting to 28 countries, including key markets such as Japan and the United States. Our creations are available through multiple channels: in retail (bakery and frozen aisles), as well as in foodservice (bakery chains, restaurants, wholesalers, and more).

Dacquoise Expertise Since 1987
Our dacquoises have been a resounding success since 1987, the year we began collaborating with the renowned Maison Lenôtre. That partnership gave birth to the iconic Plaisir aux Noix, a signature recipe still sold today in the frozen dessert aisles.
Over the years, our dacquoise expertise has evolved and diversified, while staying true to the principles of premium French pastry: elegant presentation, refined flavors, and exceptional taste.
Today, our dacquoise range is organized around two main product families:
- Bûches, available in two flavors: Double Chocolate and Vanilla-Praline
- Entremets, in round or square formats, with four refined recipes: Walnut, Lemon, Chocolate, and Caramel
